Vegetable Tart / Pizza Bread - Gluten Free!

I got a bit of a bee in my bonnet yesterday about baking a pastry / tart ! I really craved filo pastry but I was super tired from my night out in Friday so didn't want to leave the house so here is what I came up with from the ingredients then I had at home!
Now it's not the best thing I have ever made, I made the pastry and bit tooooo thick and it was more of a pizza than a tart in the end! But here we go! I found this recipe on Gourmandelle
250g gluten free flour ( I used white flour )
1 cup warm water
4g dry yeast
1/2 tsp sea salt
Gluten free bread crumbs
Add the gluten free mix, salt, yeast into the food processor
Slowly pour in the warm water. I'm using my super old food processor again so I usually pulse mine until the full amount of water is in then I only have an on off setting so switch it on to mix for about 3 minutes!
Line a bowl with oil, place the dough in, mine was a bit sloppy! Cover with clean film and leave to double in size for around 45-60 minutes
Chop your vegetables, I'll leave you to decide the amounts you want of each! I don't use tomato purée as in not a fan but this can be used!
Grease the tart dish / baking tray well with oil. Spread in the mix so it is around 1cm thick - depending on your bowl size you might not need it all
Add the filling on top - I gently squishes my vegetables into the mix
Cook in the over at 200c - mine took 30 minutes but depending on your mixture thickness this could be more or less so keep an eye on it! Make sure it's cooked the way through before you take it out
I served mine up with polenta chips! Super easy recipe - I hope you enjoy!
