last night I really wanted a stir fry, but after a hardcore gym session was too tired to go to the shop and get some sauce (even though it's only 5 minute drive - too much when your tired!!), I was totes devastated for about 3 minutes until I decided to google and thought there MUST be something in the cupboard I can make a sauce out of!!
So trusty Google helped me out and I found this recipe on BBC Good Food and added honey into it and changed Worcester sauce for HP (didn't have Worcester!), so here it is :
2 tbsp Dark soy sauce
2 tbsp balsamic vinegar
1 tbsp HP sauce
1 tbsp Honey
I mixed it all together in a small dish, then went onto the below to make Beef Stir Fry with Rice Noodles, Sweetcorn & Spaghetti Courgette:
Marinated the beef in the above sauce for 15 minutes (rest overnight if your super organised - I'm not!)
Pop 1 tsp of olive oil into a wok and heat, add the beef using tongs and lightly brown off
Boil the kettle and cook the rice noodles as instructed
Add in the courgettes and sweet corn, adding a little extra of the sauce as and when needed
Sprinkle with sea same seeds
Drain the rice noodles once cooked and add to the wok
Brown off for a further 4-5 minutes!
And here is the finished result! Doesn't look like much but it was super quick and super tasty 😻
